Stir-fried Snow Peas

Not Chinese, exactly, but of a similar style and absurdly easy.


Stir-fried Snow Peas

Ingredients

2 T. soy sauce
1 green onion, chopped
1 T. rice vinegar
1 t. toasted sesame oil
1 clove garlic, minced
1/2 t. fresh ginger, ground
1 T. grapeseed (or other light-flavored) oil
1/2# snow peas, trimmed and de-stringed

Make

Mix the first six ingredients.

Heat grapeseed oil over high heat in a medium skillet. Add snow peas and cook until just browned but not soft, about 2-3 min.

Remove from heat. Toss with soy sauce mixture.

Notes

You’ll want to avoid using too much of the compound butter, or the whole thing will be pretty oily. Save the leftovers for some other simply done vegetable. Or meat, for that matter: it’s really good on grilled chicken, for example. It’s just a nuisance to make less of it than the indicated amount.
