Steamed Snow Peas in Herb Butter

Ingredients
1 T. butter, softened
1 1/2 t. fresh tarragon or basil, finely chopped
salt & pepper (to taste, but not much)
1/2# snow peas, trimmed and de-stringed
1/2 lemon
Make
Mix the butter, minced herbs, salt and pepper in a small bowl.
Steam the peas: place in a pan with a little water. Cover and cook over medium heat for 4-5 minutes, until barely cooked and bright green. Remove beans to a bowl.
Blend the compound butter into the peas a little at a time until just coated. Add a good squeeze of lemon and toss.
Notes
You’ll want to avoid using too much of the compound butter, or the whole thing will be pretty oily. Save the leftovers for some other simply done vegetable. Or meat, for that matter: it’s really good on grilled chicken, for example. It’s just a nuisance to make less of it than the indicated amount.
