Tom and Jerry

Yield: 4 servings


3 eggs, separated
3 T. powdered sugar
½ t. ground allspice
½ t. ground cinnamon
½ t. ground cloves
½  oz. añejo or dark rum

Beat egg yolks until thin in texture and light in color. Continuing to beat, slowly add sugar, spices, and rum to the yolks.

Beat egg whites to firm peaks. Fold into yolk mixture.


· mug, heated
2 batter (from above)
1½ brandy
½ añejo or dark rum
fill very hot water or milk
– nutmeg


Can be made with granulated sugar, but takes longer to mix. Drink is stirred.
