Yield: 4-6 servings

Citrus Sugar

grated zests of 1 each lemon, lime, and grapefruit
1 quart sugar

Thoroughly combine zest and sugar. Allow to set for a few hours (or a few days) before use.

Drink

· punch bowl & cups
¼ c. citrus sugar
6 lemon juice
6 London dry gin (pref. Beefeater 24)
3 triple sec (pref. Combier)
3 St. Germain
10 chamomile tea, cold
8 sparkling wine
ice block
– lemon and orange slices, rose petals, pomegranate seeds
Stir sugar and lemon juice until sugar dissolves.
Add alcohols and tea. Refrigerate until ready to serve.
At serving time, pour into punch bowl, adding sparkling wine, ice block, and garnishes.
For each punch glass, use 1 ice cube and garnish with a lemon slice.

Notes

It calls for St. Germain, and you definitely should use St. Germain, just as surely as the lemon juice must be from lemons and not a bottle.
